An excellent site on coeliac (celiac is the US spelling) disease from the Celiac Disease Foundation, a U.S. non-profit, public benefit corporation. Coeliac disease is an immune disorder due to eating gluten which is distinct from the IgE mediated disease normally called food allergy.
