MoniQA FST - Mass spectrometry methods for allergen analysis

The application of mass spectrometry (m.s.) techniques to protein analysis (proteomics) is widely used for the study of proteins in biological research. However, proteomic techniques have not readily transferred into analytical techniques for industrial and medical use due largely to access to equipment and trained staff. The aim of this workshop is to provide an overview of modern m.s. techniques as they apply to the field of allergen analysis in relevant analytes such as foodstuffs.  

The 3-day training workshop is will encompass :

  • Introduction to mass spectrometry – theory and practise.
  • Sampling and extraction techniques in food.
  • Multiple Reaction Monitoring experiments using triple-Q devices
  • Peptide detection and quantification techniques (iTRAQ, label free) using the Orbitrap or similar instruments.
  • MALDI m.s. and proteins in mixtures – intact mass analysis,
  • Data handling.


For each of the above fields there will be both  practical (use of appropriate instrumentation) and theoretical (in the form of seminars) training. Participants will have the opportunity, under supervision, to run samples on each of the m.s. instruments and analyse the resultant data.

We plan this training workshop to include 10 participants, initially drawn from the MoniQA allergens working group from which we have had considerable interest.
