The application of mass spectrometry (m.s.) techniques to protein analysis (proteomics) is widely used for the study of proteins in biological research. However, proteomic techniques have not readily transferred into analytical techniques for industrial and medical use. The aim of this workshop is to provide a overview of modern m.s. techniques as they apply to the field of allergen analysis in typical relevant analytes such as foodstuffs.
The workshop is envisaged to encompass:
1. Introduction to mass spectrometry – theory and practise.
2. Sampling and extraction techniques.
3. Multiple Reaction Monitoring experiments using triple-Q devices
4. Peptide detection and quantification techniques (iTRAQ, label free) using the Orbitrap or similar instruments.
5. MALDI m.s. and proteins in mixtures – intact mass analysis,
6. Data handling.
For each of the above fields there will be both practical (use of appropriate instrumentation) and theoretical (in the form of seminars) training.
